Mmmm to spicy red enchilada sauce. It’s good over a massive burrito, on top of scrambled eggs, or of course, with enchiladas. I had leftover sauce and used it for days as a hot sauce. You can put it on almost anything. It can be made spicy or not and with whatever ingredients you have on hand. I was craving some chicken enchiladas one night and used what I had in my fridge.
- 1-2 cloves garlic
- Bell pepper (I had an orange one)
- 1/2 red onion
- 1 jalapeno (or other pepper of your choosing, stemmed and de-seeded
- Seasonings: chili powder, garlic powder, onion powder, cayenne pepper, coriander, paprika and cumin (feel free to use what you like)
- Small can tomato paste
- Chicken broth (I used broth I cooked the chicken in)
- Tortillas/Tacos (I used Trader Joe’s low carb whole wheat tacos at only 45 calories each!)
- Chicken – you can use store bought roasted chicken or make your own. I simply slow boiled chicken tenders in chicken broth seasoned with salt & pepper. Then shred the chicken and use the broth in your enchilada sauce.
- Cheese – I used a mixture of cheddar jack, manchego and mozzarella
- Enchilada Sauce
On medium heat place the chicken in a pan with chicken broth, salt & pepper. Put on lid and cook on low until chicken is cooked through.
While your chicken is cooking, cut up your pepper, onion, jalapeno and garlic for the sauce. They don’t have to be pretty chopping skills because you will puree it all later.
Saute all the veggies in a little bit of olive oil for 1-2 minutes.
Add tomato paste and seasonings and mix well.
Puree all ingredients together and add chicken broth to think out the sauce.
You should have a beautiful red sauce at the end. I like mine to be thick but you can add more broth in as you see fit.
To assemble the enchiladas, add your spinach, chicken and cheese and then roll.
Pour your sauce into a baking dish and place your rolled enchiladas on top.
Then top with cheese, and you can add more sauce if you’d like.
Bake in a 350 degree oven until cheese bubbles. Option to put on the broiler at the end to really get that cheese nice and brown.
Top with your choice of guacamole, cilantro, sour cream or some chopped green onions–whatever you like. Some pickled red onions would also be awesome. Nosh n Mangia!!
